A recent post on vegansaurus! introduced the world to a veganised version of the KFC monstrosity, the double down. The recipe required more effort than I was willing to give so I had to be creative/lazy.
2 redwood's vegideli bio schnitzels
3 redwood's vegideli bio rashers
A few slices of gouda style sheese
Fry up the rashers and schnitzels and then assemble.You should get something like this:
This was my first time trying the redwood schnitzels and I maybe overcooked them as they were a little tough. Rashers were nice and crispy and sheese is good stuff.
